Blueberry + Orange Fritters
Beautiful and warm, these freshly glazed blueberry and orange fritters are the perfect cheat day treat.

INGREDIENTS

2 cups self raising flour
1/2 cup white sugar
1 1/4 tsp salt
1 tsp. cinnamon
Zest from 1 orange (save half to garnish)
2 large eggs
3/4 cup buttermilk
1 tsp. vanilla
3 tbsp. butter (melted and cooled slightly)
1 1/2 - 2 cups fresh blueberries
2 cups icing sugar
1/2 tsp vanilla
1/3 cup water
Vegetable oil for frying
METHOD
For the fritters; combine the flour, sugar, salt and cinnamon in a large bowl.
In a medium bowl, whisk together the eggs, buttermilk, vanilla, orange zest and melted butter. Add to the dry ingredients, and stir until just combined. Add blueberries and fold through.
Place batter mixture into a piping bag with a large opening.
Using a heavy, deep pot add 2-3 inches of oil and heat to 180° C over a medium to high heat. Test oil by dropping a bit of batter in. It should float, and gently sizzle immediately, and turn golden within a minute or so.
Pipe about 1/2 a cup of batter into a small mound into the oil. Cook until underside is deep golden brown. Flip over and cook the other side. Remove to a cooling rack set on top of a baking sheet. Continue until all fritters are cooked.
While fritters are cooling, prepare the glaze. Add the icing sugar, salt and vanilla in a large bowl. In a small saucepan, bring the water and white granulated sugar to a boil over high heat then reduce heat to medium and simmer for 1 minute. Add this mixture to the bowl with the icing sugar and whisk until all the sugar and has been incorporated and the mixture is smooth. Drizzle glaze over cooled fritters. Sprinkle with orange zest and fresh blueberries.
