Blueberry + Coconut Chai Pancake Cereal
We might be a little late to this trend, buy these mini pancakes were too cute not to try! We had to amazing opportunity to play with some incredible mixes from Bake Mixes. Bake Mixes is owned by former Masterchef Australia contestant, Renae Smith.

From school lunches to mid-afternoon snacks in the office, the Bake Mixes range is designed to be convenient and customisable, with most products working with any choice of milk, sweetener and oils.

INGREDIENTS
30 min Cooking Time, Serves 4
1 1/3 cup coconut milk
2 tbsp maple syrup
1 tbsp coconut oil, melted
2 tbsp chai tea leaves
METHOD
In a small pan over low heat, warm the coconut milk and maple syrup. Stir in the coconut oil and allow to melt. Add the chai tea and brew for 5 mins. Strain the milk into a large mixing bowl.
Whisk in the Bake Mixes Blueberry Cinnamon Pancake Mix, until fully combined.
Let your pancake batter sit for about 5 minutes while heating a nonstick pan over medium heat. Lightly grease with a little butter or cooking oil (see notes).
Pour pancake batter into a squeezable sauce bottle. (Alternatively, use a piping bag or zip-lock bag with a small hole cut in one corner.)
Squeeze small dots of batter onto a hotT greased pan. Cook until the tops form bubbles and look set/dry. Using chopsticks flip and cook until golden on the undersides, about a further 1-2 minutes. Repeat with remaining batter, lightly greasing your pan between each batch.
Serve with maple syrup and fresh blueberries.
