Just because you have dietary restrictions doesn't mean you have to miss out on this classic campfire recipe. These s'mores are vegan, diary and gluten free.
30 mins Cooking Time, Serves 7
2 tbsp coconut oil, melted
2 tbsp non-dairy milk
7 large vegan marshmallows*
14 squares vegan dark chocolate
Preheat oven to 180°C and line a baking tray.
In a large bowl empty the packet of Bake Mixes Cacao-Chip, Chia and Oat Cookie Mix, along with the oil and milk. Mix well till a cookie dough texture forms.
With wet hands, roll heaped teaspoons of cooking dough into balls and place onto the baking tray, leaving a few cm between each cookie. Flatten the dough balls with the palm of your hand, or the bottom of a glass.
Bake for 15 minutes or until golden. You can either allow the cookies to cool on a wire rack to use later or allow to cool for 10 minutes on the baking tray before continuing with making the s'mores.
Place half the cookies upside down on the baking tray and top each with two squares of chocolate and one marshmallow. Place back in the oven (still at 180°C) for 2-3 minutes.
Remove from the oven and top with another cookie. For more of the campfire experience, use a blow torch or a gas stove to roast your marshmallows.
