Crispy Bacon + Sage Toastie

Craving some homemade comfort food? How about creating that classic meal with a twist?




INGREDIENTS

30 minute preparation time

  • 1 large apple, peeled and quartered

  • 1 large red onion

  • 2 tbs butter

  • 1 cup grated sharp cheddar

  • 6 slices thin streaky bacon

  • 4 slices sourdough bread

  • 16 small sage leaves

  • 2 tbs kewpie mayonnaise

  • Salt and pepper


METHOD

  1. Peel and grate the apple, and then half and slice the red onion

  2. In a small saucepan, heat the butter and 1 tsp of oil on medium high heat. Add the onion and stir until if starts to colour. At this point, add the grated apple and stir until caramelised. Set aside.

  3. In a medium fry pan, cook the bacon until crispy. Set onto some paper towel to drain any excess oil.

  4. While the sandwich press heats up, spread the outside of the sourdough slices with a thin layer of Kewpie mayonnaise, and the stick 4 leaves of sage to that mayonnaise.

  5. Assemble the cheese toasties with the caramelised onion and apple, bacon and cheese, then cook in the sandwich press (or pan 3 minutes each side), until golden in colour.

  6. Once cooled slightly, season with salt and pepper, cut in half and enjoy!
