Espresso Your Inner Darkness Mug Cake

This coffee chocolate Cake with Baileys cream, green vanilla buttercream and Monster Mash sprinkles from Sprinkle Pop is a great horror movie night snack. You can make all the components if you are feeling fancy or just the cake with a splash of Baileys over the top once cooked or even some ice-cream if you are after a quick snack.




INGREDIENTS

5 min Cooking Time | Serves 1


For the coffee mug cake

  • 3 tbsp milk

  • 1 tbsp instant coffee

  • 4 tbsp self raising flour

  • 2 tbsp sugar

  • 2 tbsp cocoa powder

  • 1 tbsp vegetable oil

For the green Bailey's buttercream

  • 1 tbsp butter, room temperature

  • 1 tsp Bailey Irish Cream Liqueur

  • 4 tbsp icing sugar mix

  • Dot of green food colour


METHOD

For the coffee mug cake

  1. In a large mug, place the milk. Microwave was 10 seconds and then stir in the instant coffee. Add the remaining ingredients and mix.

  2. Microwave on high for 2 minutes, watching to make sure it doesn't spill over.

  3. Allow to cool for 1 minute, before serving.

For the green Bailey's buttercream

  1. In a small bowl using a fork, mix together the Baileys and butter. This works best if the butter is very soft, but not melted.

  2. Add the icing sugar and a little bit of green food colouring and continue whisking with the fork until incorporated.

  3. Place on the mug cake and add your sprinkles!
